Focaccia is a flat shaped, bread that is very similar in texture and style to pizza, usually associated with the Liguria region in north west Italy. Crispy on the top, light and full of air bubbles in the middle, it is one of my favorite breads. It is incredibly versatile! Focaccia can be served as a side dish, used as a sandwich bread, or topped like a pizza. We make ours with our sourdough starter, giving it a slight, but not overwhelming twang that creates an incredible depth of flavor and a light and bubbly crumb. We use high quality extra virgin olive oil, and coarse sea salt. Keep an eye out because we will be introducing new permanent and seasonal toppings in the very near future!
