This simple, but elegant pasta sauce is based on a few of the popular Pasta ai Funghi recipes found through many regions in Italy. Here we use luscious cream, shallots, mushrooms, parmesan and fresh herbs. The sauce is wonderful with all of our pastas, but pairs especially well with our tagliatelle and pappardelle. Fresh steamed asparagus, fava beans, or peas would be a wonderful addition to this sauce during the Spring and Summer months.
