Tagliatelle are long 1/4" wide noodles characterized by their soft, silky texture when cooked. Traditionally they are served with a bold and textured bolognese or a ragù. Tagliatelle are also served with a sauce made from high quality butter and salty Parmigiano Reggiano, emulsified with it's own starchy cooking water to create a simple, yet decedant sauce that is sure to please everyone.
