Marinated Mushrooms

Delicious and beefy, these add amazing depth, umami and wonderful texture to any dish. They also make a great meat substitute! You can also use the liquid from the mushrooms as a sauce, marinade, or seasoning for just about anything. Yield: 1pint container 1 full pint container-(that you would find at the store) Shiitake mushrooms. Smoked Pork Chili Oil

Instead of throwing away that flavorful fat from the smoked pork broth, save it and make an amazing chili oil out of it. Use it to spice up your ramen and any other dishes you want to give a fatty and spicy kick too. You can substitute any animal fat you would like as long as its clean and good quality, chicken fat is one of my favorites. Crunchy Ramen Furikake Seasoning

Using a boring old packet of dried Ramen noodles (save those flavor packets!) you can make an awesome crunchy, salty, spicy, umami packed topping.  This can be used to sprinkle on top of not only ramen, but you can use it on rice, veggies, eggs, popcorn, or whatever else you want to add a flavorful punch and crispy texture to!  Ingredients: ½ cup- White sesame seeds (toasted then lightly crushed) 2–3ea- Nori sheets, chopped into 1” by ¼ inch little sticks ½ tsp- salt, more to taste 1 ½ tsp-  Sugar 1 ½ Packet- Dried ramen noodles, crushed small (Save seasoning packet to use...

Tare Sauce

Tare     Tare is the most widely used seasoning for ramen, its really the life blood of the dish.
